Cold Desserts Recipes - Blackberry And Apple Romanoff

Ingredients

  • 350g/12oz sharp eating apples, peeled, cored and chopped

  • 40g/3 tbsp caster sugar

  • 250ml/1 cup whipping cream

  • 5ml/1 tsp grated lemon rind

  • 90ml/6 tbsp Greek-style yogurt

  • 50g/2oz crisp meringues, roughly crumbled

  • 225g/2 cups blackberries (fresh of frozen)

  • whipped cram, a few blackberries and fresh mint leaves, to decorate


Method:

  1. Line a 900ml-1.2 liter/4-5 cup pudding basin with clear film. Toss the chopped apples into a saucepan with 1oz/2 tbsp sugar and cook for 2-3 minutes, or until softening. Mash with a fork and leave to cool.

  2. Whip the cream and fold in the lemon rind, yogurt, the remaining sugar, apples and meringues.

  3. Gently stir in the blackberries, the tip the mixture into the pudding basin and freeze for 1-3 hours.

  4. Turn out on to a plate and remove the clear film. Decorate with whirls of whipped cream, blackberries and mint leaves.
