Cold Desserts Recipes - Baked American Cheesecake

Ingredients

  • 175g/1 1/2 cups crushed digestive biscuits

  • 40g/3 tbsp butter, melted

FOR THE TOPPING

  • 450g/2 1/2 cups curd cheese or full-fat soft cheese

  • 115g/1/2 cup sugar

  • 3 eggs

  • finely grated find of 1 lemon

  • 15ml/1 tbsp lemon juice

  • 2.5ml/1.2 tsp vanilla essence

  • 15ml/1 tbsp corn-flour

  • 30m/1 tbsp soured cram

  • 150ml/2/3 cup soured cream and 1.5ml/1/4 tsp ground cinnamon, to decorate


Method:

  1. Preheat the oven to 170C/325F. Lightly grease and line an 18cm/7in square loose-based cake tin.

  2. Place the crushed biscuits and butter in a bowl and mix well. Tip into the base of the prepared cake tin and press down firmly with a potato masher.

  3. Place the cheese in a bowl, add the sugar and beat well until smooth. Add the eggs one a ta time, beating well after each addition and then stir in the lemon rind and juice, the vanilla essence, corn-flour and soured cram. Beat until the mixture is completely smooth.

  4. Pour the mixture on to the biscuit base and smooth the top level. Bake for 1 1/4 hours, or until the cheesecake has set in the centre. Turn off the oven but leave the cheesecake inside until completely cold.

  5. Remove the cheesecake from the tin, top with the soured cream and swirl with the back of a spoon. Sprinkle with cinnamon and cut into squares.
