Cold Desserts Recipes - Apricot Mousse

Ingredients

  • 300g/10oz ready-to-eat dried apricots

  • 300ml/1 1/4 cups fresh orange juice

  • 200g/3/4 cup low-fat fromage frais

  • 2 egg whites

  • fresh mint, to decorate


Method:

  1. Place the apricots in a saucepan with the orange juice and heat gently until boiling. Cover the pan and simmer gently for 3 minutes.

  2. Cool slightly, the place in a food processor or blender and process until smooth,. Stir in the apricot mixture.

  3. Whisk the egg whites until stiff enough to hold soft peaks, then fold gently into the apricot mixture.

  4. Spoon the mousse into four stemmed glasses or one large serving dish. Chill in the fridge before serving. Decorate with sprigs of fresh mint.

Cook's Tip: To make a speedier, fool-type desert, omit the egg whites and simple swirl together the apricot mixture and the fromage frais.
