Cold Desserts Recipes - Apple Foam With Blackberries

Ingredients

  • 225g/2 cups blackberries

  • 150ml/generous 1/2 cup apple juice

  • 5ml/1 tsp powdered gelatin

  • 15ml/1 tbsp clear honey

  • 2 egg whites


Method:

  1. Place the blackberries in a saucepan with 60ml/4 tbsp of the apple juice and heat gently until the fruit is soft. Remove from the heat, cool, then chill in the fridge.

  2. Sprinkle the gelatin over the remaining apple juice in a small pan and stir over a gentle heat until dissolved. Stir in the honey.

  3. Whisk the egg whites until stiff peaks form. Continue whisking hard and gradually pour in the hot gelatin mixture until well mixed.

  4. Quickly spoon the foam into rough mounds on individual plated. Chill. To serve, spoon the blackberries and juice around the foam rounds.

Cook's Tip: Make sure you dissolve the gelatin over a very low heat. It must not boil, or it will lose its setting ability.
