Cold Desserts Recipes - Mascarpone Ice-cream Recipe

Ingredients

  • 5 tablespoons full fat milk

  • Pinch of freshly grated nutmeg

  • 2 large egg yolks

  • 1 teaspoon corn flour

  • 75g/3oz caster sugar

  • 250g/9oz Mascarpone cheese

  • 200g/7oz fromage frais

Serves 6-8


Method:

  1. Place the milk and nutmeg in a saucepan and bring to a gentle simmer. In a bowl, whisk together the egg yolks, corn flour and caster sugar until light and creamy.

  2. Whisk the warmed milk into the egg mixture and return to the pan. Bring back to a gentle simmer, whisking continuously.

  3. Remove from the heat, cover the mixture and allow to cool. When cool, whisk in the Mascarpone and fromage frais, ensuring they are thoroughly mixed.

  4. Put into a suitable container and place in the freezer for 2 hours. Remove and beat well, then return to freezer until completely frozen.
