Cold Desserts Recipes - Marzipan Cherries Recipe

Ingredients

  • 12 glace cherries

  • 2 tablespoons rum

  • 250g/9oz marzipan

  • 125g/4oz dark chocolate

Serves 5


Method:

  1. Line a baking tray with a sheet of baking parchment. Cut the cherries in half and place them in a small bowl. Add the rum and stir well to coat. Leave the cherries to soak for at least 1 hour, stirring occasionally.

  2. Divide the marzipan into 24 pieces and roll each piece into a ball. Press half a cherry into the top of each marzipan ball.

  3. Break the chocolate into pieces, place in a heatproof bowl and over a pan of hot water. Stir until all the chocolate has melted.

  4. Dip each sweet into the melted chocolate using a cocktail stick, allowing the excess to drip back into the bowl. Place the coated cherries on the baking paper and chill until set.
