Ingredients

5 cardamom pods
-
200g/7oz ghee
(plus extra for greasing)

1 tablespoon cashew nuts
(broken)

1 tablespoon
raisins
-
400ml/14fl oz milk
-
150g/5oz white sugar

2-3 pinches
saffron threads

200g/7oz semolina
Serves 5
Method:

Using a pestle and mortar, crush the whole cardamom pods
to a fine powder. Set aside.

Heat 1 tablespoon of the ghee in a frying pan over a
medium heat. Add the cashew nuts and raisins and cook,
stirring, until the cashews brown and the raisins swell.
Remove from the heat, drain on kitchen paper and set
aside.

Heat the milk, sugar and saffron in a
heavy-based saucepan until the sugar dissolves. When the
milk comes to the boil, remove it from the heat and set
aside.

In a large, heavy pan, melt 100g/3 1/2oz of the
ghee over a medium heat. Add the semolina, lower the
heat and cook, stirring constantly, until brown.

Slowly add the flavored milk to the semolina, stirring
quickly. Mix in the remaining ghee, then the cashew
nuts, raisins and cardamom. Stir until the mixture forms
a thick paste.

Transfer the mixture to a shallow tray
and spread out. Leave to cool, then chill the mixture
for about 4 hours or until set. To serve, cut into
squares.
