Cold Desserts Recipes - Iced Strawberry Meringues Recipe

Ingredients

  • 225g/8oz strawberries (hulled)

  • 25g/1oz caster sugar

  • 2 tablespoons water

  • 300ml/1/2pt double cream

  • 18 medium meringue shells (about 150g/5oz total weight)

  • 2 tablespoons brandy

Serves 6


Method:

  1. Place the strawberries in a small saucepan with the caster sugar and water. Cover the pan and heat gently for about 5 minutes until mushy, then cool slightly.

  2. Puree the pan ingredients in a blender or food processor and rub through a nylon sieve to remove any pips. Allow the puree to cool for about 1 hour.

  3. Lightly whip the cream in a large mixing bowl. Break each meringue shell into 3 or 4 pieces, then fold these pieces through the double cream together with the brandy and the cold fruit puree.         

  4. Spoon the mixture into individual ramekins. Open freeze for 6 to 8 hours or overnight until firm, then wrap with aluminum foil and return to the freezer until required.

  5. Transfer to the refrigerator 20 to 30 minutes before serving.
