Cold Desserts Recipes - Honey Fruit Cake Recipe

Ingredients

  • 175g/6oz butter, softened

  • 175g/6oz clear honey

  • Grated zest of 1 lemon

  • 3 eggs (lightly beaten)

  • 225g/8oz plain flour

  • 2 teaspoons baking powder

  • 1 teaspoon mixed spice

  • 125g/4oz raisins

  • 125g/4oz sultanas

  • 125g/4oz chopped dried dates

  • 50g/2oz ready-to-eat dried apricots (finely chopped)

  • 25g/1oz ground almonds

Serves 6-8


Method:

  1. Preheat the oven to 160°C/325°F/Gas mark 3.

  2. Cream together the butter, honey  and lemon zest until light and fluffy. Gradually add the eggs, then fold in the flour, baking powder and mixed spice.

  3. Stir in the fruit and ground almonds. Mix together. Spoon into a greased and lined 20cm/8in round deep tin. Make slight hollow in the centre.

  4. Bake in the oven for 2 hours. Leave to cool in the tin for 10 minutes, then turn onto a wire rack until completely cool.
