Cold Desserts Recipes - Gingerbread Recipe

Ingredients

  • 2 tablespoons milk

  • 1/2 teaspoon bicarbonate of soda

  • 25g/1oz sultanas

  • 50g/2oz stem ginger (chopped)

  • 100g/4oz butter

  • 100g/4oz brown sugar

  • 2 eggs

  • 225ml/8fl oz treacle

  • 25g/1oz raisins

  • 225g/8oz plain flour

  • 1 teaspoon ground ginger

Serves 8-10


Method:

  1. Preheat the oven to 160°C/325°F/Gas mark 3. Warm the milk gently with the bicarbonate of soda and take off the heat. Add the sultanas and ginger.

  2. Cream the butter, add the sugar and beat until light and fluffy. Add in the eggs, one at a time. 

  3. Stir in the treacle and raisins, then add the flour and ground ginger. Mix well. Pour into a large loaf tin which has been lined with baking parchment.

  4. Bake for 1 1/2 hours, then turn out and cool on a wire rack.
