Ingredients

25g/1oz butter
-
50g/2oz caster
sugar
-
25g/1oz plain flour (sifted)

50g/2oz almonds
(chopped)

50g/2oz mixed peel (chopped)

25g/1oz raisins
-
25g/1oz glace
cherries (chopped)

Grated zest of 1 lemon
-
125g/4 1/2oz dark chocolate (melted)
Serves 5-10
Method:

Preheat the oven to 180°C/350°F/Gas mark 4. Line 2 large
baking trays with baking parchment.

Heat the butter and caster sugar in a small saucepan
until the butter has just melted and the sugar
dissolved. Remove the pan from the heat.

Stir in the
flour and mix well. Stir in the almonds, mixed peel,
raisins, cherries and lemon zest. Place teaspoonfuls of
the mixture well apart on the baking trays.

Bake in
the oven for 10 minutes or until lightly golden. As
soon as the Florentines are removed from the oven, press
the edges into neat shapes while still on the baking
trays, using a biscuit cutter. Leave to cool on the
baking trays until firm, then carefully transfer to a
wire rack to cool completely.

Spread the melted chocolate over one side of each
Florentine. Leave chocolate
side up until
set.
