Ingredients
For the topping:
Serves 4-6
Method:

Preheat the oven to 150°C/300°F/Gas mark 2 and line a
large baking sheet with non-stick baking parchment.

Whisk the egg whites with an electric mixer
until stiff, then gradually add the sugar and continue
whisking until the meringue is shiny. Whisk in the
vinegar and cream of tartar with the last of the sugar.

Mound the meringue into 12 large egg shapes on the
parchment. Bake for 45 to
60 minutes until crisp on the outside but still soft
inside. Transfer the pavlovas to a wire rack and leave
to cool.

To make the topping, peel and stone the
pineapple, mango and peaches as necessary and cut the
flesh into slices or small cubes. Place the fruit in a
bowl and stir gently to combine.

In a separate bowl,
mix together the yogurt, honey and vanilla essence. Peel
and chop the banana and toss in a little lemon juice.
Fold into the yogurt.

To serve, spoon the yogurt
mixture over the pavlovas, then the exotic fruit
mixture. Halve the passion fruit and scrape the seeds
over the top.
