Cold Desserts Recipes - Coeurs a la Crème Recipe

Ingredients

  • 225g/8oz cottage cheese

  • 25g/1oz caster sugar

  • 300ml/1/2pt double cream

  • 1 teaspoon lemon juice

  • 2 egg whites (stiffly whisked)

  • 150ml/1/4pt single cream, to serve

Serves 4-6


Method:

  1. Press the cottage cheese through a nylon sieve into a bowl. Add sugar and mix well.

  2. Whip the cream until stiff, then add the lemon juice. Mix into the cheese and sugar mixture.  Fold the stiffly whisked egg whites into the cheese mixture.

  3. Spoon the mixture into 4 or 6 individual moulds. Refrigerate overnight. Serve with single cream and/or fresh fruit.
