Cold Desserts Recipes - Coconut Cake Recipe

Ingredients

• 2 x packets 450g/1lb chocolate cake mix

• 225g/8oz desiccated coconut

• 2 eggs

• 125ml/4fl oz sour cream

• 125ml/4fl oz milk

Serves 6-8

Method:

1. Preheat the oven to 180°C/350°F/Gas mark 4.

2. Beat together the cake mix, coconut, eggs, sour cream and milk for 3 to 4 minutes, or until smooth. Pour into a greased loaf tin.

3. Bake in the oven for 45 to 50 minutes. Turn on to a wire rack to cool.
