Serves 6-8
Method:

Preheat the oven to 180°C/350°F/Gas mark 4.

Beat
together the cake mix, coconut, eggs, sour cream and
milk for 3 to 4 minutes, or until smooth. Pour into a
greased loaf tin.

Bake in the oven for 45 to 50
minutes. Turn on to a wire rack to cool.
