Cold Desserts Recipes - Chocolate Muffins Recipe

Ingredients

  • 275g/10oz self-raising flour

  • 50g/2oz cocoa powder

  • 1/2 teaspoon bicarbonate of soda

  • 175g/6oz caster sugar

  • 350ml/12fl oz buttermilk

  • 2 eggs

  • 150g/5oz butter (melted and cooled)

Serves 6-8


Method:

  1. Preheat the oven to 200°C/400°F/Gas mark 6. Lightly grease 12 muffin pans.

  2. Sift the flour, cocoa powder and bicarbonate of soda into a bowl and add the sugar. Make a well in the centre.

  3. In a jug, whisk the buttermilk and eggs together and pour into the well. Add the butter and fold gently with a metal spoon until just combined. Fill each pan about three-quarters full.

  4. Bake for 20 to 25 minutes, or until the muffins are risen. Allow to cool for a 2 minutes and transfer to a wire rack to cool.
