Ingredients

2 tablespoons
cocoa
-
50ml/2fl oz hot water
-
1
teaspoon gelatine
-
275g/10oz silken tofu
-
1 tablespoon
brandy
-
2 egg whites
-
50g/2oz caster sugar
Serves 6
Method:

Stir the cocoa with the hot water until dissolved.
Sprinkle the gelatine in an even layer onto 1 tablespoon
water in a small bowl and leave to go spongy.

Bring a
small pan of water to the boil, remove from the heat and
place the bowl in the pan. The water should come halfway
up the side of the bowl. Stir the gelatine until
dissolved.

Drain the tofu and place in a blender or
food processor. Add the cocoa mixture and brandy and
blend until smooth, scraping down the sides. Transfer to
a bowl and stir in the gelatine mixture.

Whisk the
eggs whites in a clean dry bowl until soft peaks form.
Gradually add the sugar, beating well between each
addition, until stiff and glossy peaks form.

Fold into
the chocolate mixture and spoon into a dish. Refrigerate
until set.
