Cold Desserts Recipes - Angel Cake Recipe

Ingredients

  • 12 5g/4oz self-raising flour

  • 375g/13oz caster sugar

  • 12 egg whites

  • 1 1/2 teaspoons cream of tartar

  • 1/4 teaspoon salt

  • 1/2 teaspoon vanilla essence

  • 1/4teaspoon almond essence

  • Icing sugar to dust

Serves 6-8


Method:

  1. Preheat the oven to 180°C/350°F/Gas mark 4. Have an un-greased angel food tin ready. Sift the flour and 175g/6oz sugar together 4 times.

  2. Using an electric beater, beat the egg whites with the cream of tartar and salt until stiff peaks form. Beat in the remaining sugar, 1 tablespoon at a time. Fold in the vanilla and almond essences.

  3. Sift a quarter of the flour and sugar mixture onto the egg white and, using a spatula, gradually fold in. Repeat with the remaining flour and sugar.  

  4. Spoon the mixture into the angel food tin and bake for 35 to 40 minutes, or until puffed and golden. Turn upside down on a wire back and leave in the tin until cool. Gently shake to remove the cake. Dust cake with icing sugar.
