Sailing Boat Cake
Ingredients
20cm square
sponge cake
225 butter icing
15ml cocoa powder
4 large chocolate
flakes
115g royal icing
blue food
coloring
25cm square cake
board
rice paper
blue and red
powder tints
paint brush
plastic drinking
straw
wooden cocktail
stick
2 small cake
ornaments
Method:
Split and fill
the cake with half of the butter icing. Cut
7cm from one side of the cake. Shape the
larger piece to resemble the hull of a boat. Place
diagonally across the cake board. Mix the cocoa
powder into the remaining butter icing I and spread
evenly over the top and sides of the boat.
Make the
rudder and tiller from short lengths of flake
and place them at the stem of the boat. Split
the rest of the flakes lengthways and press on
to the sides of the boat, horizontally, to
resemble planks of wood. Sprinkle the crumbs
over the top.
Cut two rice
paper rectangles, one 14 x 16cm and the
other 15 x 7.5cm/6 x 3in. Cut the bigger one in a
gentle curve to make the large sail and the smaller
one into a triangle. Brush a circle of blue powder
Tint on to the large sail. Wet the edges of the
sails and stick on to the straw. Make a hole for the
straw 7.5cm/3in from the bow of the boat and push
into the cake.
Cut a rice paper
flag and brush with red powder Tint. Stick the flag
on to a cocktail stick and insert into the top of
the straw. Tint the royal icing blue and spread on
the board in waves. Place the small ornaments on the
boat.
