Cake
Ingredients

2 x 15cm round
sponge cakes
-
115g butter icing
-
60ml apricot jam,
warmed and sieved
-
450g marzipan
-
500g sugar-paste
icing
-
blue and red food
coloring
-
115g royal icing
-
25 x 35cm cake
board
-
5cm fluted cutter
-
2 small
greaseproof paper piping bags
-
No 8 start and No
2 plain nozzles
-
8 candles and
holders
-
2 small racing
cars
Method:
-
Split and
fill the cakes with a little butter icing. Cut
off a 1cm piece from the side of each
cake and place the cakes on the cake board, cut
edges together.

Brush the cake
with apricot jam and cover with a layer of marzipan.
Tint 450g/11b/3 cups of the sugar-paste icing pale
blue and use to cover the cake.

Mark a 5cm/2in
circle in the centre of each cake. Roll out the
remaining white sugar-paste icing and cut out two
fluted 5ern/2in circles and stick them in the marked
spaces.

Tint the royal
icing red. Pipe a shell border around the base of
the cake using the star nozzle. Pipe a track for the
cars on the cake using the plain nozzle and stick
the candles into the two white circles. Place the
cars on the track.
