Pirate's Hat Cake
Ingredients
25cm round sponge
cake
225g butter icing
45ml apricot jam,
warmed and sieved
450g marzipan
500g sugar-paste
icing
black and gold
food coloring
chocolate money
jewel sweets
30cm square cake
board
fine paint brush
Method:
Split and fill
the cake with butter icing. Cut in half and sandwich
the halves together. Stand upright diagonally across
the cake board and cut shallow dips from each end to
create the brim of the hat. Brush with apricot jam.
Cut a strip
of marzipan to layover the top of the cake. Then
cover the whole of the cake with a layer of
marzipan. Tint 450g/11b/3 cups of the
sugar-paste
icing black. Use to cover the cake.
Roll out the
remaining sugar-paste icing and cut some 1cm
strips. Stick the strips in place with a little
water around the brim of the pirate's hat and mark
with the prongs of a fork to make a braid.
Make a skull and
crossbones template and mark on to the hat. Cut the
shapes out of the white sugar-paste icing and stick
in place with water. Paint the braid strip gold and
arrange the chocolate money and jewel sweets on the
board.
