Trace the outline
and paws of the monkey from the photograph. Enlarge
to fit the cake and cut a template.
Split and
fill the cake with butter icing. Place on the
cake board and use the template to cut out the
basic shape of the monkey. Use the trimmings to
shape the nose and tummy. Brush with apricot jam
and cover with a layer of marzipan.
Tint 450g/11b/3
cups of the sugar-paste icing pale pink and use to
cover the cake. Leave to dry overnight.
Mark the position
of the face and paws. Tint a little of the
sugar-paste icing blue and use for the eyes. Tint a
little icing black and cut out the pupils and tie.
Tint the
remaining sugar-paste icing dark pink and cut out the
nose, mouth, ears and paws. Stick all the features
in place with water. Roll the trimmings into balls
and place on the board to hold the candles.
