Party Teddy Bear Cake
Ingredients

20cm square
sponge cake
-
115 butter icing
-
45ml apricot jam,
warmed and sieved
-
450 marzipan
-
350g white
sugar-paste icing
-
25g desiccated
coconut
-
blue and black
food coloring
-
115g royal icing
-
25cm square cake
board
-
2 small
greaseproof paper piping bags
-
small red bow
-
No 7 shell nozzle
-
1.5m red ribbon
-
6 candles and
holders
Method:
-
Cut the cake in
half and sandwich together with butter icing. Place
on the cake board and brush with apricot jam. Cover
with a thin layer of marzipan and then white
sugar-paste icing. Leave to dry overnight. Using a
template, carefully mark the position of the teddy
on to the cake.

Put the
coconut into a bowl and mix in a drop of blue I
Coloring to Color it pale blue. Spread a thin
layer of royal icing within the outline of the
teddy. Before the icing dries, I sprinkle on
some pale blue coconut and press it down
lightly.

Roll out the
sugar-paste trimmings and cut out a nose, ears and
paws. Stick in place with a little royal icing. Tint
some
royal icing black and pipe on the eyes, nose and
mouth. Use the bow as a tie and stick it in place.
Pipe a white royal icing border around the base of
the cake, tie the ribbon around the cake and
position the candles on top.
