Children's Party Cakes Recipes - Nurse's Kit Cake

Ingredients

• 35 x 20cm chocolate sponge cake

• 120ml apricot jam, warmed and sieved

• 675g sugar paste icing

• red food coloring

• 25cm square cake board

• selection of toy medical equipment

Method:

1. Place the cake dome-side down and cut in half width ways.

2. To make the base of the nurse's box, turn one cake half dome-side up and hollow out the centre to a depth of 1cm leaving a 1cm border on the three uncut edges. Brush the tops and sides of both halves with jam.

3. Tint 150g/5oz sugar-paste icing deep pink. Use a little to make a small handle for the box. Wrap in clear film and set aside. Cover the cake board with the rest of the pink icing. Tint 25g of the sugar-paste icing red. Cover with clear film and set aside.

4. Tint the remaining icing light pink and divide into two portions, one slightly bigger than the other. Roll out the bigger portion and use to cover the base of the box, easing it into the hollow and along the edges. Trim, then position the base on the cake board.

5. Roll out the other portion and use to cover the lid of the box. Trim, then place on top of the base at a slight angle.

6. Stick the handle to the base of the box using water. Cut a small cross out of red icing and stick it on the lid. Place a few toy items under the lid, protruding slightly. Arrange some more items around the board and cake.
