Split and fill
the cake with butter icing. Cut off and set aside a
7.5cm/3in strip. Shape the remaining piece of cake
to form the hull of the boat. Place diagonally on
the cake board
Use the set-aside
piece of cake, to cut a rectangle 10 x 6cm/4 x
21-1in for the cabin and a triangular piece for the
roof. Sandwich together with butter icing or apricot
jam.
Cover the three
pieces with a layer of marzipan. Tint the
sugar-paste
icing brown and use most of it to cover the hull and
cabin. Use the remaining brown icing to make a long
sausage. Stick around the edge of the hull with
water. Mark planks with the back of a knife. Leave
to dry overnight.
Tint one-third of
the royal icing yellow and spread it over the cabin
roof with a palette knife. Roughen it with a skewer
to create a thatch effect.
Tint the
remaining royal icing blue and spread over the cake
board, making rough waves. Stick a rice paper flag
on to I the chocolate mint stick and press on the
back of the boat. Stick the small animals on to the
boat with a dab of icing.
