Children's Party Cakes Recipes - Monsters on the Moon

Ingredients

  • 1 quantity quick-mix sponge cake

  • 500g sugar-paste icing

  • 225g marzipan

  • black food coloring

  • edible silver glitter powder (optional)

  • 375g caster sugar

  • 2 egg whites

  • 60ml water

  • ovenproof wok

  • various sizes of plain round and star cutters

  • 30cm round cake board

  • small monster toys


Method:

  1. Preheat the oven to 180OC/350"F/Gas 4. Grease and line the wok. Spoon in the cake mixture and smooth the surface. Bake in the centre of the oven for 35 -40 minutes. Leave for 5 minutes, then turn out on to a rack and peel off the paper.

  2. With the cake dome-side up, use the round cutters to cut out craters. Press in the cutters to about 2.5cm deep, then remove and cut the craters out of the cake with a knife.

  3. Use 115g/4oz of the sugar-paste  icing to cover the cake, pulling off small pieces and pressing them in uneven strips around the edges of the craters. Tint the remaining sugar-paste  icing black. Roll out and cover the board. Stamp out stars and replace with marzipan stars of the same size. Dust with glitter powder, if using and place on the board.

  4. Put the sugar, egg whites and water in a heatproof bowl over a pan of simmering water. Beat until thick and peaky. Spoon the icing over the cake, swirling it into the craters and peaking it unevenly. Sprinkle over the silver glitter powder, if using, then position the monsters on the cake.
