Children's Party Cakes Recipes - Iced Fancies Cake

Ingredients

  • 115g butter, at room temperature

  • 225g caster sugar

  • 2 eggs, at room temperature

  • 175g plain flour

  • 1.5ml salt

  • 7.5ml baking powder

  • 120ml milk

  • 5ml vanilla essence

  • For the Icing

  • 2 large egg whites

  • 400g sifted icing sugar

  • 1-2 drops glycerin juice of 1 lemon

  • food colorings

  • colored vermicelli, to decorate

  • crystallized lemon and orange slices, to decorate


Method:

  1. Preheat the oven to 190.C/375'F/Gas 5. Line a 16-bun tray with paper cases.

  2. Cream the butter and sugar until light and fluffy. Add the eggs, 1 at a time, beating well after each addition. Sift over and stir in the flour, salt and baking powder, alternating with the milk. Add the vanilla essence.

  3. Half-fill the cups and bake for about 20 minutes, or until the tops spring back when touched. Stand in the tray to cool for 5 minutes, then unmould on to a wire rack.

  4. For the icing, beat the egg whites until stiff. Gradually add the sugar, glycerin and lemon juice, and beat for 1 minute.

  • Tint the icing with different food colorings. Ice the cakes.

  • Decorate the cakes with colored vermicelli and crystallized lemon and orange slices. Make freehand decorations using a paper piping bag.
