Iced Fancies Cake
Ingredients
115g butter, at
room temperature
225g caster sugar
2 eggs, at room
temperature
175g plain flour
1.5ml salt
7.5ml baking
powder
120ml milk
5ml vanilla
essence
For the Icing
2 large egg
whites
400g sifted icing
sugar
1-2 drops
glycerin juice of 1 lemon
food colorings
colored
vermicelli, to decorate
crystallized
lemon and orange slices, to decorate
Method:
Preheat the oven
to 190.C/375'F/Gas 5. Line a 16-bun tray with paper
cases.
Cream the
butter and sugar until light and fluffy. Add the
eggs, 1 at a time, beating well after each
addition. Sift over and stir in the flour, salt
and baking powder, alternating with the milk.
Add the vanilla essence.
Half-fill the
cups and bake for about 20 minutes, or until the
tops spring back when touched. Stand in the tray to
cool for 5 minutes, then unmould on to a wire rack.
For the icing, beat the
egg whites until stiff. Gradually add the
sugar, glycerin and lemon juice, and beat
for 1 minute.
Tint the icing
with different food colorings. Ice the cakes.
Decorate the
cakes with colored vermicelli and crystallized
lemon and orange slices. Make freehand decorations
using a paper piping bag.
