Horse Stencil Cake
Ingredients
20cm round sponge
cake
115g butter icing
45ml apricot jam,
warmed and sieved
450g marzipan
450g sugar-paste
icing
yellow, brown,
black, red, orange, and blue food coloring
25cm round cake
board
spoon with
decorative handle
fine paintbrush
horse and letter
stencils
1.5m blue ribbon
7 candles and
holders
Method:
Split and fill
the cake with butter icing. Place on the cake board
and brush with apricot jam. Cover with a layer of
marzipan. Tint the sugar-paste icing yellow, roll out
and use to cover the cake. Roll the trimmings into
two thin ropes, long enough to go halfway round the
cake. Brush water in a thin band around the base of
the cake, lay on the ropes and press together.
Pattern the border with the decorative spoon handle.
Leave to dry overnight.
If you do not
have a stencil, make one by tracing a simple
design on to a thin piece of card and cutting
out the shape with a craft knife. Place the
horse stencil in the centre of the cake. With a
fairly dry brush, gently paint over the parts
you want to Color first. Allow these to dry
completely before adding another Color,
otherwise the Colors will run into each other.
Clean the stencil between Colors.
When the horse
picture is finished carefully paint on the
lettering. Tie the ribbon around the side of the
cake and place the candles on top.
