Frog Prince Cake
Ingredients

20cm round sponge
cake
-
115g butter icing
-
45ml apricot jam,
warmed and sieved

450g
marzipan
-
corn flour, for
dusting
-
400g sugar paste
icing
-
115g royal icing
-
green, red, black
and gold food coloring
Method:

Split and fill
the cake with butter icing. Cut in half and sandwich
the halves together with apricot jam. Stand upright
diagonally across the cake board. Brush the cake
with apricot jam and cover with marzipan.

Tint 450g of the
sugar-paste icing green and cover the
cake. Roll the remaining green sugar-paste icing
into 1cm diameter sausages. You will need
two folded 20cm/8in lengths for the back legs
and 1410cm/4in lengths for the front legs and
feet. Stick in place with a little royal icing.
Roll balls for the eyes and stick in place.

Roll out the
reserved sugar-paste icing and cut a 5 x 19cm strip. Cut out triangles along one edge to
make the crown shape. Wrap around a glass dusted
with corn-flour and moisten the edges to join. Leave
to dry.

Cut a 10cm/4in
circle for the white shirt. Stick in place and trim
the base edge. Cut white circles and stick to the
eyes. Tint a little sugar-paste pink, roll into a
sausage and stick on for the mouth. Tint the rest
black and use for the pupils and the bow tie. Stick
in place.
