Ingredients

20cm square
sponge cake
-
115g butter icing
-
45ml apricot jam,
warmed and sieved
-
350g marzipan
-
450 sugar-paste
icing
-
red, black and
green food coloring
-
liquorices strips
-
115g royal icing
-
sweets
-
50g desiccated
coconut
-
25cm round cake
board
-
small greaseproof
paper piping bag
-
No 2 plain nozzle
-
2 silver bells
-
3 candles and
holders
Method:
-
Split and fill
the cake with the butter icing. Cut in half and
sandwich one half on top of the other. Place on the
cake board and brush with apricot jam.

Trim a thin
wedge off the front edge to make a sloping
windscreen. Cover with marzipan. Tint 350g of the
sugar-paste icing red and use to
cover the cake.

For the ladder,
cut the liquorices into two strips and some short
pieces for the rungs. Tint half the royal icing
black and use some to stick the ladder to the top of
the cake. Roll out the I remaining sugar-paste icing,
cut out windows and stick them on with a little
water.

Pipe around the
windows in black royal icing. Stick sweets in place
for headlights, lamps and wheels and stick the
silver bells on the roof. Tint the coconut green,
spread a little royal icing over the cake board and
sprinkle with the coconut. Stick sweets to the board
with royal icing and press the candles into the
sweets.
