Ingredients

  • 25cm square sponge cake

  • 225g butter icing

  • 45ml apricot jam, warmed and sieved

  • 450g marzipan

  • 450g sugar paste icing

  • red, yellow, blue, black, green and gold food coloring

  • 115g royal icing

  • 30cm square cake board

  • pastry wheel

  • large and fine pain-brushes

  • wooden cocktail stick

  • small greaseproof paper piping bags

  • No 2 writing nozzle

  • flower decorations

Method:

  1. Split and fill the cake with butter icing. Cut triangles off two corners and use the pieces to make a chimney. Place on the cake board and brush with apricot jam. Cover with a layer of marzipan then sugar-paste icing.

  2. Mark the roof with a pastry wheel and the chimney with the back of a knife. Paint the chimney red and the roof yellow.

  3. Tint 25g/1oz/2 tbsp of sugar-paste icing red and cut out a 7.5 x 12cm door. Tint enough sugar-paste icing blue to make a fanlight. Stick to the cake with water. Mark windows, 6cm square, with a cocktail stick. Paint on curtains with blue food Coloring. Tint half the royal icing black and pipe around the windows and the door.

  4. Tint the remaining royal icing green. Pipe the flower stems and leaves under the windows and the climber up on to the roof. Stick the flowers in place with a little icing and pipe green flower centers. Pipe the house number or child's age, the knocker and handle on the door. Leave to dry for 1 hour, then paint with gold food Coloring.
