  • 20cm square sponge cake

  • 115g butter icing

  • 45ml apricot jam, warmed and sieved

  • 450g marzipan

  • 500g sugar paste icing

  • brown, orange, green, red and blue food coloring

  • 115g royal icing

  • 50g desiccated coconut

  • chocolate mint sticks

  • 25cm square cake board

  • wooden cocktail sticks

  • fine paint brush

  • 4 small greaseproof paper, piping bags

  • No 1 basket weave and plain nozzles

Method:

  1. Split and fill the cake with butter icing- Cut the cake in half. Cut one half in two diagonally from the top right edge to the bottom left edge to form the roof of the tent. Stick the two wedges, back-to-back, on top of the rectangle with jam. Trim to 10cm/4in high and use the trimmings on the base. Place the cake diagonally on the board and brush with jam.

  2. Cover with marzipan, reserving some for modeling. Tint 50g/2oz of the sugar-paste icing brown and cover one end of the tent. Tint the rest orange and cover the rest of the cake. Cut a semicircle for the tent opening and a central 7.5cm/3in slit. Layover the brown end. Secure the flaps with royal icing. Put halved cocktail sticks in the corners and ridge.

  3. Tint the coconut green. Spread the board with a thin layer of royal icing and sprinkle with the coconut.

  4. Tint the reserved marzipan flesh-Color and use to make a model of a child. Paint on a blue T-shirt and leave to dry. Tint some royal icing brown and pipe on the hair with a  basket weave nozzle. Tint the icing and pipe on the mouth and eyes. Make a bonfire with broken chocolate mint sticks.
