Split and fill the cake
with butter icing. Cut in half to make
semicircles, sandwich the halves together and
stand upright on the cake board. Trim the ends
to shape the head and tail. Brush with apricot
jam and cover with a layer of marzipan. Tint
350g of the sugar-paste icing yellow and use to
cover the cake.
Tint 115g/4oz of
the sugar-paste icing black. Roll out
and cut three stripes, each 2.5 x 25cm.
Space evenly on the cake and stick on with
water. Use the remaining icing to make the
eyes and mouth, tinting the icing blue for
the pupils and pink for the mouth. Stick on
with water.
Tint the
coconut with a drop of yellow coloring. Cover
the cake board with
royal icing then sprinkle with coconut. Place
the daisies on the board.
To make the wings, cut the
doily in half, wrap each half into a cone shape and
stick together with sticky tape. Cut the pipe
cleaner in half and stick the pieces into the cake,
just behind the head. Place the wings over the pipe
cleaners.
