Cheesecakes Recipes - Chocolate Cheesecake

Ingredients

  • 275g plain chocolate

  • 1.1kg cream cheese, at room temperature

  • 200g sugar

  • 10ml vanilla essence

  • 4 eggs

  • 15ml cocoa powder

  • 175ml soured cream

For the base

  • 200g chocolate biscuits, crushed

  • 75g butter, melted

  • 2.5ml ground cinnamon


Method:

  1. Preheat the oven to 180.C/350'F/Gas 4. Grease the base and sides of a 23 X 7.5cm/9 x 3in springform tin.

  2. For the base, mix the biscuits with the butter and cinnamon. Press into the base of the tin.

  3. Melt the chocolate in the top of a double boiler. Set aside..

  4. Beat the cream cheese until smooth, then beat in the sugar and vanilla. Add the eggs, one at a time.

  5. Stir the cocoa powder into the soured cream. Add to the cream cheese mixture. Stir in the melted chocolate.

  6. Pour over the crust. Bake for 1 hour. Cool in the tin, then remove the rim. Chill before serving.
