Cheesecakes Recipes - Baked Cheesecake with Fresh Fruits

Ingredients

  • 175g/6oz digestive biscuits, crushed

  • 50g/2oz unsalted butter, melted

  • 450g/1lb curd cheese

  • 150ml/1/4 pint soured cram

  • 115g/4oz caster sugar

  • 3 eggs, separated

  • grated rind of 1 lemon

  • 30ml/2 tbsp Marsala

  • 2.5ml/1/2 tsp almond essence

  • 50g/2oz ground almonds

  • 50g/2oz sultanas

  • 450g/1lb prepared mixed fruits, such as figs, cherries, peaches and strawberries, to decorate


Method:

  1. Preheat the oven to 180C/350F/Gas 4. Grease and line the sides of a 25cm round spring form tin. Combine the biscuits and butter and press into the base of the tin. Chill for 20 minutes.

  2. For the cake mixture, beat together the cheese, cream, sugar, egg yolks, lemon rind, Marsala and almond essence until smooth and creamy.

  3. Whisk the egg whites until stiff and fold into the cheese mixture with all the remaining ingredients, except the fruit, until evenly combined. Pour over the biscuit base and bake for 45 minutes, until risen and just set in the centre.

  4. Leave in the tin until completely cold. Carefully remove the tin and peel away the lining paper.

  5. Chill the cheesecake for at least 1 hour before decorating with the prepared fruits, just before serving.
