Cakes and Gateaux Recipes - Orange and Walnut Swiss Roll

Ingredients

  • 4 eggs, separated

  • 115g caster sugar

  • 115g very finely chopped walnuts

  • pinch of cream of tartar

  • pinch of salt

  • icing sugar, for dusting

For the filling

  • 300ml whipping cream

  • 15ml caster sugar

  • grated rind of 1 orange

  • 15ml orange flavors liqueur


Method:

  1. Preheat the oven to 180.C/350'F/Gas 4. Line a 30 X 24cm/12 x 9'hin Swiss roll tin with greaseproof paper and grease the paper.

  2. Beat the egg yolks and sugar until thick. Stir in the walnuts. Beat the egg whites with the cream of tartar and salt until stiffly peaking. Fold into the walnut mixture.

  3. Pour the mixture into the prepared tin and level. Bake for 15 minutes. Invert the cake on to greaseproof paper dusted with icing sugar. Peel off the lining paper, Roll up the cake with the sugared paper. Leave to cool.

  4. For the filling, whip the cream until softly peaking. Fold in the caster sugar, orange rind and liqueur.

  5. Unroll the cake. Spread with the filling, then re-roll. Chill, To serve, dust with icing sugar.
