Cakes and Gateaux Recipes - One Stage Victoria Sandwich

Ingredients

  • 175g self raising flour

  • pinch of salt

  • 175 butter, softened

  • 175g caster sugar

  • 3 eggs

  • To finish

  • 60-90ml raspberry jam

  • caster sugar or icing sugar


Method:

  1. Preheat the oven to 180'C/350"F/Gas 4. Grease two 18cm/7in sandwich tins, line the bases with greaseproof paper and grease the paper.

  2. Whisk all the cake ingredients together until smooth and creamy. Divide the mixture between the cake tins and smooth the surfaces. Bake for 25-30 minutes, or until a skewer  inserted into the centre of the cakes comes out clean. Turn out on to a wire rack, peel off the lining paper and leave to cool.

  3. Place one of the cakes on a serving plate and spread with the raspberry jam. Place the other cake on top.

  4. Cut out paper star shapes, place on the cake and dredge with sugar. Remove the paper to reveal the pattern.
