Cakes Recipes - Spice Cake with Ginger Frosting

Ingredients

  • 300ml milk

  • 30ml golden syrup

  • 10ml vanilla essence

  • 75g chopped walnuts

  • 175g butter, at room temperature

  • 285g sugar

  • 1 whole egg, plus 3 egg yolks

  • 275g plain flour

  • 15ml baking powder

  • 5ml grated nutmeg

  • 5ml ground cinnamon

  • 2.5ml ground cloves

  • 1.5ml ground ginger

  • 1.5ml mixed spice stem ginger pieces, to decorate

For the topping

  • 175g cream cheese

  • 25g unsalted butter

  • 200g icing sugar

  • 30ml finely chopped stem ginger

  • 30ml syrup from stem ginger


Method:

  1. Preheat the oven to lS0'C/350"F /Gas 4. Line and grease three 20cm cake tins with greaseproof paper. In a bowl, combine the milk, golden syrup, vanilla and walnuts.

  2. Cream the butter and sugar until light and fluffy. Beat in the egg and egg yolks. Add the milk mixture and stir well. Sift together the flour, baking powder and spices three times. Add to the butter mixture in four batches, folding in carefully.

  3. Divide the cake mixture between the tins. Bake until the cakes spring back when touched lightly, about 25 minutes. Leave in the tins for 5 minutes, then cool on a wire rack. For the frosting, combine all the ingredients and beat until smooth. Spread the frosting between the layers and over the top. Decorate with pieces of stem ginger.
