Marbled Spice Cake
Ingredients

75g butter,
softened

115g caster sugar

2 eggs, lightly
beaten

few drop s
vanilla essence

130g plain flour
-
7.5ml baking
powder 45ml milk
-
45ml black
treacle
-
5ml mixed spice
-
2.5ml ground
ginger
-
175g icing sugar,
sifted, to decorate
Method:
-
Preheat the oven
to lS0'C/350'F/Gas 4. Grease and flour a 900g
kugelhopf or ring mould.

Cream together
the butter and sugar until light and fluffy. Beat in
the eggs and vanilla.

Sift together the
flour and baking powder, then fold into the butter
mixture, alternating with the milk.

Add the treacle
and spices to one-third of the mixture. Drop
alternating spoonfuls of the two mixtures into the
tin. Run a knife through them to give a marbled
effect.

Bake for 50
minutes, or until a skewer inserted into the centre
comes out clean. Leave in the tin for 10 minutes,
then turn out on to a wire rack to cool.

To decorate, make
a smooth icing with the icing sugar and some warm
water. Drizzle over the cake and leave to set.
