Cakes Recipes - Fairy Cakes with Blueberries

Ingredients

  • 115g soft margarine

  • 115g caster sugar

  • 5ml grated lemon rind

  • pinch of salt

  • 2 eggs, beaten

  • 115g self raising flour, sifted

  • 120ml whipping cream

  • 75-115 blueberries

  • icing sugar, for dusting


Method:

  1. Preheat the oven to 190'C/375"F/Gas 5. Cream the margarine, sugar, lemon rind and salt in a large bowl until pale and fluffy.

  2. Gradually beat in the eggs, then fold in the flour until well mixed. Spoon the mixture into eight to ten paper cases on baking sheets and bake for 15-20 minutes, until just golden.

  3. Leave the cakes to cool. then scoop out a circle of sponge from the top of each using the point of a small sharp knife, and set them aside.

  4. Whip the cream and place a spoonful in each cake, plus a couple of blueberries. Replace the lids at an angle and sift over some icing sugar.
