Cakes Recipes - Devil's Food Cake with Orange

Ingredients

  •  50g/1/2 cup cocoa powder

  • 175ml/3/4 cup boiling water

  • 175g/3/4 cup butter, at room temperature

  • 350g/2 cups dark brown sugar

  • 3 eggs

  • 275g/2 1/2 cups plain flour

  • 7.5ml/1 1/2 tsp bicarbonate of soda

  • 1.5ml/1/4 tsp baking powder

  • 120ml/1/2 cup soured cream

  • blanched orange rind shreds, to decorate

FOR THE FROSTING

  • 285g/1 1/2 cups caster sugar

  • 2 egg whites

  • 60ml/4 tbsp frozen orange juice concentrate

  • 15ml/1 tbsp lemon juice

  • grated rind of 1 orange


Method:

  1. Preheat the oven to 180'C/350"F/Gas 4. Line two 23cm/9in cake tins with greaseproof paper and grease the paper. In a bowl, mix the cocoa and water until smooth.

  2. Cream the butter and sugar until light and fluffy. Add the eggs, one at a time, beating well after each addition. When the cocoa mixture is lukewarm, add to the butter mixture. Sift together the flour, soda and baking powder twice. Fold into the cocoa mixture in three batches, alternating with the soured cream. Pour into the tins and bake until the cakes pull away from the sides, 30-35 minutes. Stand for 15 minutes, then turn out on to a wire rack.

  3. For the frosting, place all the ingredients in the top of a double boiler. With an electric mixer, beat until the mixture holds soft peaks. Continue beating off the heat until thick enough to spread.

  4. Sandwich the cake layers with frosting, then spread over the top and side. Decorate with orange rind shreds.
