Ingredients
250ml corn oil
175g granulated
sugar
3 eggs
175 plain flour
7.5 baking powder
7.5 bicarbonate
of soda
1.5ml salt
7.5ml ground
cinnamon
good pinch of
grated nutmeg
1.5ml ground
ginger
115g chopped
walnuts
225g finely
grated carrots
5ml vanilla
essence
30ml soured cream
8 tiny marzipan
carrots, to decorate
For the frosting
175g full fat
soft cheese
25g butter,
softened
225g icing sugar,
sifted
Method:
Preheat the oven
to 180'C/350'F/Gas 4. Grease and line two 20cm/8in
loose-based round cake tins.
Put the corn oil
and sugar into a bowl and beat well. Add the eggs,
one at a time, and beat thoroughly. Sift the flour,
baking powder, bicarbonate of soda, salt, cinnamon,
nutmeg and ginger into the bowl and beat well. Fold
in the chopped walnuts and grated carrots and stir
in the vanilla essence and soured cream.
Divide the
mixture between the cake tins and bake in the centre
of the oven for about 65 minutes, or until a skewer
inserted into the centre of the cakes comes out
clean. Leave to cool in the tins on a wire rack.
Meanwhile, beat all the frosting ingredients
together until smooth.
Sandwich the
cakes together with a little frosting. Spread the
remaining frosting over the top and sides of the
cake. Just before serving, decorate with the
marzipan carrots.
