Preheat the oven
to 160'C/325'F / Gas 3. Lightly grease a deep 20cm/
8in round loose-based cake tin and line with
nonstick baking paper.
Place the butter,
sugar, eggs, flours, baking powder and spice in a
large bowl and beat together until thoroughly mixed.
Fold in the apples, sultanas and enough milk to make
a soft dropping consistency.
Spoon the mixture
into the prepared tin and level the surface.
Sprinkle the top with demerara sugar, then bake for
about 1 hours, until risen, golden brown and firm to
the touch. Cool in the tin for a few minutes, then
turn out onto a wire rack to cook completely. Serve
in slices.
