Breads Recipes - Sage Soda Bread

Ingredients

  • Makes one loaf

  • 225g wholemeal flour

  • 115g/4oz/1 cup strong white flour

  • 25ml salt

  • 5ml/1 tsp bicarbonate of soda 

  • 30ml/2 tbsp shredded fresh sage

  • 300-450ml buttermilk


Method:

  1. Preheat the oven to 220'C/425"F/Gas 7. Sift the dry ingredients into a bowl. Stir in the sage and add enough buttermilk to make a soft dough.

  2. Shape the dough into a round loaf and place on a lightly greased baking sheet.

  3. Cut a deep cross in the top. Bake in the oven for about 40 minutes, or until the loaf is well risen and sounds hollow when tapped on the base. Leave to cool on a wire rack.
