Breads Recipes - Irish Soda Bread

Ingredients

  • Makes one loaf

  • 275g/10oz plain flour

  • 150g/1 cup wholemeal flour

  • 5ml/1 tsp bicarbonate of soda

  • 5ml/1 tsp salt

  • 25g/1oz/2 tbsp butter or margarine, at room temperature

  • 300ml buttermilk

  • 15ml/1 tbsp plain flour, for dusting


Method:

  1. Preheat the oven to 200'C/400"F/Gas 6. Grease a baking sheet. Sift together the flours, bicarbonate of soda and salt. Make a central well and add the butter or margarine and buttermilk. Working from the centre, stir to combine the ingredients until a soft dough is formed.

  2. With floured hands, gather the dough into a ball. Knead for 3 minutes. Shape the dough into a large round.

  3. Place on the baking sheet. Cut a cross in the top with a sharp knife and dust with the flour. Bake until brown, about 40-50 minutes. Transfer to a wire rack to cool.
