Breads Recipes - Breadsticks

Ingredients

  • 15ml/1 tbsp active dried yeast

  • 300ml/1 1/4 cups lukewarm water

  • 425g/scant 4 cups plain flour

  • 10ml/2 tsp salt

  • 5ml/1 tsp caster sugar

  • 30ml/2 tbsp olive oil

  • 1 egg, beaten, to glaze

  • 150g/10 tbsp sesame seeds, toasted

  • coarse salt, for sprinkling


Method:

  1. Combine the yeast and water, stir and leave for about 15 minutes. Place the flour, salt, sugar and olive oil in a food  processor. With the motor running, slowly pour in the yeast mixture and process until the dough forms a ball.

  2. Knead until smooth. Place in a bowl, cover and leave to rise in a warm place for 45 minutes. Grease two baking sheets.

  3. Roll the dough into 18-20 30cm/12in sticks. Place on the baking sheets, brush with egg then sprinkle with sesame seeds and coarse salt. Leave to rise, uncovered, for 20 minutes.

  4. Preheat the oven to 2OOC/ 400F/Gas 6. Bake until golden, about 15 minutes. Turn off the heat but leave in the oven for a further 5 minutes. Serve warm or cool.
