Recipes - Traditional Sugar Biscuits
Ingredients
350g/3 cups plain flour
5ml/1 tsp bicarbonate of soda
10ml/2 tsp baking powder
1.5ml/1/4 tsp grated nutmeg
115g/1/2 cup butter or margarine, at room
temperature
225g/generous 1 cup caster sugar
2.5ml/1/2 tsp vanilla essence
1
egg
120ml/1/2 cup milk
colored or demerara sugar, fro sprinkling
Method:
Sift the flour,
bicarbonate of soda, baking powder and nutmeg into a
small bowl. Set aside. Cream the butter or
margarine, caster sugar and vanilla essence together
until the mixture is light and fluffy. Add the egg
and beat to mix well.
Add the flour
mixture alternately with the milk, stirring with a
wooden spoon to make a soft dough. Wrap the dough in
clear film and chill for 30 minutes.
Preheat the oven
to 180"C/350"F/Gas 4. Roll out the dough on a
lightly floured surface to a 3mm/1/8in thickness.
Cut into circles with a biscuit cutter.
Transfer the
biscuits to ungreased baking sheets. Sprinkle each
one with sugar. Bake until golden, 10-12 minutes.
With a palette knife, transfer the biscuits to a
wire rack to cool.
