Biscuits, Bars And Cookies Recipes - Toasted Oat Meringues

Ingredients

  • 50g/generous 1/2 cup rolled oats

  • 2 egg whites

  • 1.5ml/1/4 tsp salt

  • 7.5ml/1 1/2 tsp corn-flour

  • 175g/3/4 cup caster sugar


Method:

  1. Preheat the oven to 140'C/275'F/Gas 1. Spread the oats on a baking sheet and toast in the oven until golden, for about 10 minutes. Lower the heat to 120'C/250'F/Gas 1/2. Grease and flour a baking sheet.

  2. Beat the egg whites and salt until they start to form soft peaks. Sift over the corn-flour and continue beating until the whites hold stiff peaks. Add half the sugar; whisk until glossy. Add the remaining sugar and fold in, then fold in the oats.

  3. Place tablespoonfuls of the mixture on to the baking sheet and bake for 2 hours, then turn off the oven. Turn over the meringues, and leave in the oven until cool.
