Biscuits, Bars And Cookies Recipes - Sultana Cornmeal Biscuits

Ingredients

  • 65g/1/2 cup sultanas

  • 50g/1/2 cup finely ground yellow cornmeal

  • 175g/1 1/2 cups plain flour

  • 7.5ml/1 1/2 tsp baking powder

  • pinch of salt

  • 225g/1 cup butter

  • 200g/1 cup granulated sugar

  • 2 eggs

  • 15ml/1 tbsp Marsala or 5ml/1 tsp vanilla essence


Method:

  1. Soak the sultanas in a small bowl of warm water for 15 minutes. Drain. Preheat the oven to 180'C/350"F /Gas 4. Sift the cornmeal and flour, the baking powder and the salt together into a bowl.

  2. Cream the butter and sugar together until light and fluffy. Beat in the eggs, one at a time. Beat in the Marsala or vanilla essence. Add the dry ingredients to the batter, beating until well blended. Stir in the sultanas.

  3. Drop heaped teaspoonfuls of batter on to a greased baking sheet in rows about 2in apart. Bake for 7-8 minutes, or until the biscuits are golden brown at the edges. Remove to a wire rack to cool.
