Spiced Raisin Bars
Ingredients
100g/scant 1 cup plain flour
7.5ml/1 1/2 tsp baking powder
5ml/1 tsp ground cinnamon
2.5ml/1/2 tsp grated nutmeg
1.5ml/1/4 tsp ground cloves
1.5ml/1/4 tsp mixed spice
215g/1 1/2 cups raisins
115g/1/2 cup butter or margarine, at room
temperature
90g/1/2 cup sugar

eggs
170g/scant 1/2 cup black treacle
50g/1/2 cup walnuts, chopped
Method:
Preheat the oven
to 180C/350F /Gas 4. Then line a 33 x 23cm/13 x
9in baking tin with greaseproof paper and grease the
paper.
Sift together the
flour, baking powder and spices. Place the raisins
in another bowl and toss with a few tablespoons of
the flour mixture.
With an electric
mixer, cream the butter or margarine and sugar
together until light and fluffy. Beat in the eggs,
one at a time, then the black treacle. Stir in the
flour mixture, raisins and walnuts.
Spread evenly in
the baking tin. Bake until just set, about 15-18
minutes. Cool in the tin before cutting into bars.
