Biscuits, Bars And Cookies Recipes - Spiced Raisin Bars

Ingredients

  • 100g/scant 1 cup plain flour

  • 7.5ml/1 1/2 tsp baking powder

  • 5ml/1 tsp ground cinnamon

  • 2.5ml/1/2 tsp grated nutmeg

  • 1.5ml/1/4 tsp ground cloves

  • 1.5ml/1/4 tsp mixed spice

  • 215g/1 1/2 cups raisins

  • 115g/1/2 cup butter or margarine, at room temperature

  • 90g/1/2 cup sugar

  • 2 eggs

  • 170g/scant 1/2 cup black treacle

  • 50g/1/2 cup walnuts, chopped


Method:

  1. Preheat the oven to 180C/350F /Gas 4. Then line a 33 x 23cm/13 x 9in baking tin with greaseproof paper and grease the paper.

  2. Sift together the flour, baking powder and spices. Place the raisins in another bowl and toss with a few tablespoons of the flour mixture.

  3. With an electric mixer, cream the butter or margarine and sugar together until light and fluffy. Beat in the eggs, one at a time, then the black treacle. Stir in the flour mixture, raisins and walnuts.

  4. Spread evenly in the baking tin. Bake until just set, about 15-18 minutes. Cool in the tin before cutting into bars.
