Orange Biscuits
Ingredients
115g/1/2 cup butter, at room temperature
200g/1 cup sugar
2
egg yolks
15ml/1 tbsp fresh orange juice
grated rind of 1 large orange
200g/1 3/4 cups plain flour
15ml/1 tbsp corn-flour
2.5ml/1/2 tsp salt
5ml/1 tsp baking powder
Method:
Cream the butter
sugar until light and fluffy. Add the yolks, orange
juice and rind, and continue beating to blend.
In another bowl,
sift together the flour, corn-flour, salt and baking
powder. Add to the butter mixture and stir until it
forms a dough. Wrap the dough in greaseproof paper
and chill for 2 hours.
Preheat the oven
to 190C/375F. Grease two baking sheets. Roll
spoonfuls or the dough into balls and place
2.5-5cm/1-2in apart on the baking sheets.
Press down with a
fork to flatten. Bake until golden brown, about
t8-10 minutes. Using a palette knife, transfer to a
wire rack to cool.
